Made with the finest organic ingredients, these deliciously moist, almond-scented Simnel Cakes are bursting with fresh lemon and orange zest and plump vine fruits. I steam the fruit in organic apple, orange & le mon juice, and add amaretto and a splash of almond extract before baking.

There's lots of marzipan in this cake: the traditional seam of marzipan running through the middle, and toasted marzipan topping (eleven balls represent the apostles, not counting Judas). I use delicious organic Lübecker marzipan – made with 52% almonds so it's gorgeous: soft, and delicately sweet.

All ingredients gluten-free. And I can make yours dairy-free, if that's what you need.
