The sponge

Divine, melt-in-the-mouth gluten-free sponge, made with organic gluten-free flour, butter, eggs and sugar. Choose your flavour: Madagascar Vanilla, Chocolate, Chocolate/orange, Orange or Lemon.

Or how about something more sophisticated? Cappuccino? Peach & raspberry? Strawberries & cream? Raspberry prosecco? The world's your oyster!

Need dairy-free, or egg-free cupcakes? Not a problem! Or you could have cupcakes using ground almonds and very finely grated vegetables instead of butter – lovely and moist. And scrumptious!

The frosting

You can have your cupcakes piled high with buttercream, made with organic butter and icing sugar (above left).

Or you could go for a smooth, glossy fondant icing (left). My own favourite is a smoosh of organic cream cheese buttercream, less sweet than traditional buttercream, flavoured with organic vanilla.

For grown-up posh, you could go for smooth mascarpone sprinkled with cocoa powder and topped with a chocolate-covered coffee-bean, or a white chocolate & mascarpone combo.

I use organic cocoa, fresh fruit purées or fruit powders if possible in my coloured frostings. Or a bit of food colour (not organic) – I use concentrated colour paste, so if you're having soft colours, there's no need to use a lot.

The decorations

There are lots of gluten-free sprinkles and toppers available: sugar strands or discs, mini-marshmallows, rice-paper roses, sugar pearls or bright, chocolate beans.

For grown-up cupcakes, toppings include fresh or freeze-dried berries, white or dark chocolate shavings, chocolate-covered coffee beans and fragrant organic dried rose petals.

For a special treat, you could splash out on fresh organic edible flowers (top). I get mine from Aweside Farm. Or you can have sugared flowers, like the pretty pansies (below left), if I have them in stock.

If you prefer, I can pipe your decorations: flowers, names, letters, swirls, hearts – whatever you fancy!
