Dark, moist, silky-smooth and intensely alcoholic, this Jamaican celebration cake is made with organic vine and citrus fruit, finely chopped then steeped for several months in Appleton Kingston 62 Jamaica Rum and Amontillado sherry. Lightly sweetened with organic blackstrap molasses, no added sugar. All ingredients gluten-free and dairy-free. No nuts used, but not guaranteed free from nut traces. Comes plain: serve with a dollop of rum cream, if you like. For a celebration, I can add organic marzipan and/or soft icing and a piped message (see below).

Marzipan Fruit Cake
This tousled blonde may look rough-cut, but it's a real gem. The judges at the Great Taste Awards said it had:
"a good texture and evenly distributed fruit. Very generous with the booze ... good flavour throughout."
It's made with organic fruit – fudgy dried pears, sweet cherries and plump sultanas, all steeped in Appleton Estate white rum – and packed with chunks of delicately sweet organic Lübecker marzipan. With just a spoonful of unrefined Muscovado sugar added to the mix, all ingredients gluten- and dairy-free.

Covered with organic Lübecker marzipan and luscious dark rum frosting, this cake was a hit with the judges at the Great Taste Awards. They said it was:
