October – the month of mellow fruitfulness, harvest time, and Apple Days up and down the country!

So this month's cake is a Spiced Apple Cake. I've adapted a traditional West Country recipe: I grind whole almonds – to give it a wholesome, nutty texture – and add them to my own blend of gluten-free flours. It's chock-full of chunks of organic Kentish apples, and spiced with organic sultanas and freshly ground cinnamon, with organic honey drizzled on top while the cake's still warm from the oven.

Gorgeous thickly sliced as a teatime treat, or warmed gently in the oven and served for dessert with a dollop of vanilla yoghurt.
